One of my favorite tastes of summer is fresh basil. Today I made the first batch of fresh pesto for the summer and used it for the following:

Chicken, Chickpea and Pesto Salad
Source: Everyday Food June 2010

2 shredded cooked chicken breast halves
1/2 large English cucumber
2 celery stalks, thinly sliced
1 can (15 oz) chickpeas, drained and rinsed
1/3 cup pesto
salt and pepper

Mix ingredients. Serve with a squeeze of fresh lemon juice and salt & pepper.
