Pasta Bean Toss

I haven't posted a recipe in a while. Here is what we had for dinner last night, recipe courtesy of Runner's World.

Pasta Bean Toss

1 lb whole grain penne pasta
2 red onions, sliced thinly (we only used one and I think it was fine)
2 cloves of garlic, minced (i would use more of this)
12 plum tomatoes diced (i used a carton of cherry tomatoes, not cut)
5 julienned carrots
2 cups raw broccoli
3 TB Worcestershire sauce
5 TB fresh basil (didn't have this so i used a TB of Penzey's Pasta Sprinkle)
1 can red kidney beans
1 can white beans
Parmesan Cheese

Cook the pasta as directed. Cook Garlic and Onions until softened in some olive oil. Add in tomatoes, carrots, broccoli, worcestershire sauce and basil/spices. After 2 minutes, add in beans. Toss with pasta when finished (you may want to test a vegetable so that it's done to your liking). Garnish with parmesan. Easy and very tasty. This makes a ton of leftovers too!
